What is Neapolitan Pizza?

Sometimes known as Pizza Napoletana, Neapolitan pizza is exactly what it sounds like: a type of pizza originating in Naples, Italy. Its timelessness lies in its simplicity: nothing more than dough, tomatoes, cheese, olive oil, and basil are used in the making.

Unlike other forms of pizza, Neapolitan pizza often includes more sauce than cheese and is rarely served by the slice. As a result, you can expect it to be about the size of a personal pan.

How Did Pizza in Napoli get Started?

The modern take on the pizza was, in fact, invented in Naples. Before the 18th century, a common dish popular in Europe was the flatbread, essentially a crust. There was also the schiacchiate, a flattened bread that dates back to the Egyptians.

The addition of tomatoes wasn’t a welcome change at first. The ingredient was considered poisonous by many Italians for a few centuries after their introduction, but, over time, many cooks found that adding tomatoes increased the dish’s popularity tremendously.

At this point, the Marinara pizza was invented. It became so widespread that the pizzeria was created to fill in the demand complete with a wood-burning stove, and a professional pizza maker became a genuine vocation.

The cheese and greens weren’t added until baker Raffaele Esposito baked a special dish for King Umberto and Queen Margherita during their Naples visit. It was a pizza with added ingredients (tomatoes, cheese, and basil) that made up the colors of the Italian flag. And thus, the Neapolitan pizza was born.

In 1984, the Associazione Verace Pizza Napoletana (“True Neapolitan Pizza Association”) was formed to ensure the same standards of quality are still kept all these years.
